The Advantages of Raw Honey
Honey, in its natural state, never spoils. Some commercial honeys are pasteurized. However, more frequently, conventional honey is heated, not to pasteurize it, but so that it can be filtered and easily poured. Those temperatures can be under 100 °F. Our honey is simply coarse-filtered through a stainless steel sieve without heat, preserving the beneficial properties of honey. Excessive heat can kill the natural enzymes and the flavor; further, it may also harm anti-oxidant benefits. And lastly, fine filtering removes some particles of pollen and propolis that make raw honey a super-food.
